Earthly Vibes (One banana, two banana....You Get It.)


Late Night Banana Bites

Welcome back family, it’s Friday, time to vibe. I’m in the middle of a late-night writing session and I’m craving something sweet. Being vegetarian doesn’t stop my hand from digging in the chip bag. That being said, I try to find better, healthier alternatives for satisfying my sweet tooth. Long story short, I ended up with this awesome recipe using a few miscellaneous ingredients hanging out in my cupboard. It’s simple to make, low cost, and most importantly delicious! Let’s dive in.

For this recipe, you will need

  • Ripe bananas (1 per serving)

  • A box of pancake mix

  • Vegetable cooking oil

AND THAT’S IT!!! Trust me I know what you are thinking, if you don’t like bananas then this recipe isn’t for you. But if you do, prepare to be amazed. By the end of this recipe, you’ll be asking,” Banana FostWho?” Ha! Get it? Like Banana Foster… …. Let’s move on.

Cut the banana into ¼ inch slices before adding them to your pancake batter (add a few drops of vanilla or orange zest to your batter for a more floral taste). Heat up your oil to medium high heat, and begin to fry your sinful morsels. Make sure to coat the bananas evenly before frying, for even cooking. Fry until golden brown and Ta-Da. A healthy guilt-free snack great for children and adults. The ripe banana combines with the fluffiness inside the pancake while the outside remains crispy and delicious. Top with maple syrup or agave nectar for added sweetness. Or you can go crazy and add ice-cream and homemade caramel like I’m about to do right now!
